Coconut margarita

Serves one cocktail

We may not be able to travel far these Christmas holidays, but this fruity coconut margarita will have you feeling like you’re on a tropical island escape!

Ingredients

90ml coconut cream
45ml tequila
25ml triple sec
1 lime, juiced
Ice

*for a mocktail version, just leave out the alcohol and add another lime juice

Optional for garnish

Honey
Sea salt
Roasted coconut
Lime slices

Method

Pour coconut cream, tequila, triple sec and lime juice in a cocktail shaker. Add a handful of ice. Put the top on the shaker and shake for about 15 seconds.

For the garnish: Combine the sea salt in roasted coconut on a plate. Spread the honey on a separate plate. Dip the entire rim of the serving glass in honey and then in the sea salt and roasted coconut. Add ice to the glass and strain the shaken margarita into the glass. Finish the garnish with a lime slice.
